A Brief Profile of the Holding Company

PDK Shenaz Hotels Pvt. Ltd., ventured into its first hospitality unit Grain of Salt at Kolkata in April 2002. Spread over 25000 sq feet and split over two levels, Grain of Salt is a multifarious F&B Outlet with allied hospitality outlets like Restaurant, Bar, Lounge and Banquets. Situated within Kolkata’s prime central district on Camac Street, the outlets have earned distinguished praise and accolades since its inception four years ago.

Designed by one of the foremost architects of the country, the property started with a Brand tie-up with India’s leading celebrity Chef, Sanjeev Kapoor, of Khana Khazana fame. This signature hospitality unit comprises of a 140 seater Restaurant, a 60 seater Hookah Bar - Shisha, two Banquets for 125 & 500 guests respectively, and a swanky neo classic 40 seater Platinum Lounge.

As a part of the group’s globalization plans, Grain of Salt has now been rechristened as IVORY in Kolkata as well. This is in consonance to the Managements belief that Brand building and Trade mark ownership will continue to be its strongest asset in the future.

PDK’s propert at Kolkata has consistently outperformed industry benchmark and grown at a staggering 18% average year on year. Despite high levels of evolved competition and newer influx of outlets, the organization has consistently benefited out of innovative ideas, trends and out of the box thinking. A spate of awards and accolades won over the years include the Restaurant Entrepreneur of the Year Award (FHRAI) won by the founder Mr. Nitin Kohli within a year of the Restaurant having opened; the Editors Choice Preferred Restaurant of the Year 2002 as awarded by the Times of India Group; the Premier Restaurants of Kolkata by the Telegraph; Best Continental Restaurant of the Year 2004 as awarded by the Times of India; ISO certifications in 2005; Environment Champion of the Year 2005 amongst stand alone Restaurants (FHRAI) and the Best Lounge Bar Award as won by Shisha in April 2006 are just a few mentions.

Unit Grain of Salt (now IVORY) under PDK Shenaz Hotels Pvt Ltd became India’s first stand alone Restaurant property to have achieved the coveted prestige of being ISO certified on all three counts namely –Quality Management Systems, ISO 9001:2000; Environment Management Systems’ ISO 14001:2004 and Food Safety, HACCP by the leading Certification body of the world BSI.

Spread out on multi level system, the property comprises of a 140 seater restaurant, 60 seater Hookah bar - Shisha, two Banquets for 125 & 500 guests respectively, and a swanky neo classic 40 seater Platinum Lounge. An open terrace concept banqueting facility for 500 pax has been provided for on the terrace of the building covering about 10000 sq feet.

After two years of unblemished performance, today we need no introduction. The heads high in the air, the feeling is great... You have been our inspiration and we strive to surpass your expectation each time round. The restaurant serves a delectable combination of Oriental, World and Indian cuisine. Master Chef Sanjeev Kapoor's indelible imprint on all the recipes has always been our forte.

The new Menu re-launched in April categorises the Menu into three different categories,viz., Oriental, World Cuisine and a Desi Khazana section. And whats more, the menu is being altered yet again just to fire your belly. Bite into our Continental specialities like the Baked Princess or a Flaky Parmesan Fish. The oriental fare fires your belly into exotic dishes like The Budha's Delight or a Roast lamb Cantonese Style.

Ivory Kitchen - The Banquet

A new 150 seater air-conditioned banquet facility with an exclusive entrance is provided for in the property. This can be used for Parties and allied banqueting services. Corporates can use the same for Conference Rooms with a Television connection and video-conferencing facilities. The banquet hall is interconnected with the Bar whereby the area can be increased to suit corporate requirements thereby increasing capacity to 200 to 250.

Ivory Kitchen - The Terrace Banquet

An exclusive open air banqueting facility overlooking Camac Street is available with a capacity of 500; this can be used for hosting larger parties, marriages, other social functions and commercial events.

Terrace Banquet


It is the endeavor of our company to provide state of the art facilities and machinery in all our projects so as to make it a pollution free environment. Prevention and control of Water and Air Pollution is of utmost importance to this company. In order to incorporate a pollution free system, our company plans to invest in the following devices of control :

Air Pollution

  1. All burners will come with s/s hood attached with air purifier nets and filters.

  2. An s/s duct will connect to the hood, which will release the air via a wet scrubber and sampling hole.
  3. The purified air will then be released via an Industrialised exhaust fan into a chimney.
  4. The chimney will further be fitted with purifier for carbon and toxin check devices before release into the atmosphere.
  5. The air so released will further be subject to the stringent tests of the West Bengal Pollution Control Board before issue of Consent to operate from them.

Water Pollution
  1. All water outlets will connect via s/s drainage system to a centralized bin.

  2. The centralized bin will treat the water for toxins, ash and vegetable wastes.
  3. The water so disposed will be in the following category: Ph 5.5 to 9.0; Total suspended solids below 600 mg/l; Biochemical oxygen demand below 350 mg/l; Oil & Grease below 20 mg/l.
  4. This water so treated will be disposed via Calcutta Municipal Corporation sewerage vat in to the ground swerves.
  5. The water so released will also be subject to tests of the West Bengal Pollution Control Board before issue of Consent to operate from them.

Noise Pollution

As per the West Bengal Pollution Control Board norms sound will be maintained as shown: 6.00 am to 9.00 pm 65 Db(A) Leq; 9.00 pm to 6.00 am 55 Db(A) Leq.
